Buttermilk Waffles
Ingredients:
2 eggs
1 ¾ cup buttermilk
½ cup canola oil
½ teaspoon vanilla
2 cups flour (whole-wheat pastry flour is best)
1 tablespoon sugar
4 teaspoons baking powder
¼ teaspoon salt

Preheat waffle iron.

Beat eggs in large bowl until fluffy.

Mix in buttermilk, oil, and vanilla.
4.
Combine flour, sugar, baking powder, and salt.
Stir into buttermilk mixture until smooth. Be careful not to over mix.
5.
Pour about ¼ cup of batter onto hot iron. Cook
until golden brown.
Serve hot.
